Chow Down Around Town-Chuck's Fish

Last night our Chow Down destination was Chuck's Fish off of Hwy 280.  I have been wanting to go here for a while and was so excited that I was finally able to try it. 

I had been told to order the Summer Summer roll-it was not on the menu but apparently a favorite, so who was I to argue.  Let me tell you, it did not disappoint and neither did the bread pudding or the 1/2 off bottles of wine! ;)

The best bread pudding I have ever had...it really wasn't even bread pudding, more like hot, gooey cookie dough with raspberry sauce and powdered sugar-love!

From a galaxy far, far away...or just 600 miles

Last night after work I had the honor of hanging out with these precious folks!

Tiff is in town from all the way across the world Tulsa for the week while her hubby works in Mississippi and I got to hang out with her precious family.  It was so great to meet her newest member of the family, Graham and hang out with the rest of the fam-Shannon, Harper, Henley, Patti B, and Bob. 

I know that visiting home has got to be exhausting for them b/c they have so many people who want to spend time with them, and I feel so blessed that I was able to spend some quality time with all of them.

Easiest recipe ever-Crockpot Chicken n Dumplings

I've jumped onto the crockpot meals train and am loving it! It is so easy and most recipes I have tried, makes enough for leftovers for days as well. I tried this one last week and it has to be the easiest thing to make.

Crockpot Chicken and Dumplings

what you need:
4 chicken breasts (I used chicken cutlets and it worked fine as well)
1 package of flaky biscuits (8 biscuits)
2 cans of cream of chicken soup
1/2 onion (the original recipe called for a whole but 1/2 was more than enough and we love onion)
2 cups chicken stock
(pretty much use your best judgement on the liquids...enough to cover the chicken and you my need to add more when you put the "dumplings" in)
garlic powder
salt and pepper
All you do is throw everything into the crockpot except for the biscuits.  I even threw the chicken in frozen and  it wasn't a problem...told you easy peasy!
Let it cook on low for about 6-7 hours. 
Pull the chicken apart with a fork.
Cut the biscuits into small little dough balls-maybe 10 balls per biscuit and let it cook for another hour.  The biscuits will plump up. 
You also may need to add a bit more chicken stock if it gets a little thick.

Completely useless

That is exactly what the hubs and I were this past weekend. 
We literally left the house one time to cheer on our Tigers at Ben and Mere's house on Saturday night.  Other than picking up a pizza last night, we were completely lazy on the couch catching up on the last 18 seasons of Jersey Shore. 
I love marathon weekends! :)

I had a lot of good intentions this past weekends on catching up on laundry and cleaning the house (since apparently the maid isn't going to show up) and doing some DIY projects around the house, but instead I enjoyed my time with my boys...I love lazy weekends! :)

Natural birth control

This past Friday night we went out to eat with my bro and sis in law and nephews...need I say more. :)

Going out to eat with 2 7 year old boys (Hunter had a friend with him too) and a 15 month old will give you a whole new prespective on life...and a hot meal!  Mitch and I had a blast playing with the boys and talking to Brad and Julie, but we were worn slap out afterwards.  :)

I just snapped a few pictures, but wanted to share because he is growing before our very eyes!

Never a dull moment

Top of the mornin' to ya!

Not sure where to begin with the last week or so, so hang in there with me while I attempt to hit replay...

This week didn't start off like we had hoped...as I was on my way to Maria's baby shower for Baby Wilder (who will be here before we know it) I got a call that no one wants to ever get-" Hey sweetie, we are going to run your father up to the ER...he has some tightening in his chest". 

Needless to say I hightailed it straight to the ER.  To save you all from an extremely long-winded post, after a day in the hospital, lots of tests and hospital sitting, Pops heart looks good.  They are going to be running some more tests to figure out what is causing the pressure in his chest but the docs feel very optimistic and believe that he needs to take a wwoo-sa moment and calm down a bit. 

I am so happy that he is ok and feel so blessed that we were able to get him the help he needed and make sure he is ok.  I love you Pop!

Aside from Pop's heath scare, we have been enjoying some AU football, friends and family time lately. 

Last weekend we cheered our AU Tigers to victory against South Carolina at Jay and Keri's house.

And this past weekend, we helped our friends Ashley and Austin break in their new home with a little housewarming party.  The game didn't exactly end the way we would have wanted (Arkansas beat AU), but we had a great time catching up with some great friends that we don't get to see nearly often enough.


Needless to say we have been busy in our little corner of the world and I don't see any signs of it slowing down any time soon...good thing is that it is certainly never boring!
